Ingredients

  • 1 purple yam
  • 1 parsnip
  • 1 turnip
  • 4 carrots
  • 1 onion
  • 5 cloves of garlic, minced
  • 1 1/2 cups black-eyed peas
  • 2 bouillon cubes
  • 6-7 cups of water
  • salt, pepper, & parsley to taste

Instructions

In a large pot, dice and sauté onion and garlic. Dice veggies and add to sauté. After some time, add the water and bouillon cubes, bring to a boil, and simmer for 1 hour. Remove from pot, blend in a blender or food processor, and return to pot.
